The answer sits in three parts of the tool. The basket body is a wire mesh bowl with a reinforced rim wire, so oil leaves the food through hundreds of openings at once instead of through a spoon's worth of slots. The handle is a long two-wire stem that carries the hand well away from the oil surface, and it ends in a loop that lets the basket hang on a rail between batches. The mesh bowl is joined to the handle through a wire yoke that spreads the load across the rim, which is what keeps the basket from tipping when it is loaded to the top.
