Air moves around each level, which is the point of a cooling rack - trays cool from underneath as well as on top, so bread, rolls and pastry come off with a dry base instead of a sweated one. It arrives complete - the buyer unfolds it and uses it, with no tools, no fittings bag and no instruction sheet. It is not a height-adjustable rack and not a knock-down kit, and buyers who need to set a different spacing for deep and shallow trays should order the screw-adjustable model instead.
